The
success of Mange 2 is based on the lively
partnership of its Co owners - John O'Connell
and Kieran McGuinness. John takes care of
the Front of House duties, ensuring that
the diners are ably looked after, leaving
Kieran free to reign in the kitchen. Together,
the pair have a wealth of catering and hospitality
experience gained from years spent abroad,
which shows in the fine attention to detail
prevalent in the restaurant.

John
commenced his catering/hospitality
career when he pursued a degree in
Hotel and Catering Management at the
University of Ulster from
1984 - 1987, following a 2 year stint
working in restaurants on the Channel
Islands. John spent the next 12 years
working both as Chef and Manager in
restaurants in New York, Paris and
Bordeaux, where his love of French
cuisine was honed. On his return to
Derry in 1998, John decided to open
his own restaurant to showcase the
influences and experience gained on
his travels. In June 2002, John opened
Mange 2. |

McGUINNESS ~ a background. |

Following
his initial training at the Catering
College in Portrush, Kieran McGuinness
embarked on a chefing Odyssey that
saw him work in restaurants in London,
Switzerland, San Francisco and New
York, where from 1995 onwards he worked
at the World renowned 'Scarborough
Fair' restaurant in Bronxville,
under the tutelage of the distinguished
Chef,
John Byrne. Kieran returned to Derry
in 2002
and in 2003 became Head Chef at Mange
2. In 2005, he became a full partner
with John in the business. |
